Roasted Okra
Okra is one of those ingredients that I normally avoid, as the preparation does not fit with my general impatient demeanour. However, this simple dish requires only a single cut per pod and a dash of seasoning - that’s it. The oven does the rest of the work, ensuring these exotic green talons are mellowed and softened.
Ingredients
1 bunch of okra
salt and pepper to taste
Directions
Wash the okra really well, they can often be full of sand/silt.
Slice in half lengthways.
Toss okra and seasoning on baking sheet. You can choose to add some freshly chopped chiles or a spice mix here.
Roast under the grill for 10 to 15 mins. Ensure you keep an eye on it and pull it when the tips start to blacken.
